Vegan Mexican food at El Gitano: 1125 E Sunset Drive


Tasty vegan Mexican food is always a treat, especially in the middle of long dreary winter days when the sun begins to feel like nothing more than a hazy memory. El Gitano will make you forget the dark cold days, at least for awhile, as you enjoy their delicious chips and salsa and sip on a margarita. El Gitano has a vegetarian section on their menu and they are also very accommodating when it comes to adapting menu items to make them vegan. One of the things vegans frequently have to be aware of at some Mexican restaurants is whether or not the food they ordered was cooked in animal fat, or if animal by-products are used during the preparation process. It can be hard to relax and enjoy your food when you have to ask a million questions, although people are generally very nice when they answer them, which makes it easier. The staff at El Gitano have always been very nice whenever I have eaten there and had questions to ask, which I appreciate.

I had the Fajitas last night. Wow. Among the best meals I have had, Mexican, vegan, or otherwise. I usually don't like green peppers, but even those were delicious in this dish. Since becoming vegan 9 years ago, I pretty much gave up on Mexican food (except for the few places that offer vegan burritos.) I plan to try their tofu enchiladas next-sans dairy, of course.
My latest favorite dish there is the spincah enchildas veganized. Fresh spinach and mushrooms and corn and soooo much flavor! It's totally wonderful and amazing! And their salsa is still my favorite in town.
Just had the vegan spinach enchiladas for linner today and they were as amazing as always!

Any idea if their rice is "safe"?
The last time I was there, the white rice was vegan, but the Mexican rice was not. It's been a little while since I have eaten there since I no longer eat corn :( so you may want to double-check on that. Let me know if you learn anything new! Thanks!

Bayou on Bay: 1300 Bay Street

Not only does Bayou have several vegan options on their menu, they also have weekend vegan brunch options! If you have not yet tried the vegan hash, I recommend it.  This mouth-watering dish takes potatoes, avocado, onions, other veggies--cooked just right and combined with the perfect amount of seasoning--to create a fantastic dish you will want to eat again and again. Weekends are just that much better when you can incorporate brunch at Bayou into them!

Pigs Peace Sanctuary: 27631 56th Ave NW, Stanwood, WA

I can't believe I have wanted to visit the Pigs Peace Sanctuary for nearly 20 years, and then finally, yesterday, my wish came true. And the experience was truly amazing. If you are not yet familiar with the Pigs Peace Sanctuary, I encourage you to learn more about it. We are so lucky to have such a valuable place so nearby Bellingham. Not only does it provide a safe place for rescued animals to recover from trauma and live out their lives in peace and happiness, it also offers humans a place to connect with and learn more about these beautiful, often misunderstood creatures.  Judy Woods and  the volunteers that help her are doing really incredible work and you cannot help but be moved by the stories of bravery, survival, recovery, and connection that Judy shares with you when you visit the sanctuary.
