Vegan Shepherd's Pie: A Sort-of Recipe

Vegan Shepherd's Pie and Fresh Greens A couple of weeks ago I had some leftover mashed potatoes to use up and so I decided to make a shepherd's pie. I wasn't sure how it would turn out and sort of made it up as I went along, and it ended up being fantastic. My husband really loved it, and I think it's the perfect meal for one of those comfort-food-craving-days. Unfortunately, I don't have an actual recipe, so I am going to try and share with you the basics in case you want to try out your own version some time. I won't bother explaining how to make mashed potatoes, because I am pretty sure you either know how or can figure it out pretty easily. And I am not sure how much I had, but basically it was enough to cover a rectangular 8 x 12 casserole dish. A few weeks ago, we went with some friends after VegFest to enjoy a meal together at Chaco Canyon , a place we had been dying to check out since the first time we heard about their should-be-famous pesto melt sandwich. Nuba Restaurant, Vancouver BC Note: This review is from 4/1/2012 As promised, I am going to share with you some details of my wonderful meal from a couple of weeks ago at the Lebanese restaurant called Nuba, which is located in Vancouver. My husband and I went to Nuba for an early dinner on a Saturday evening, and luckily they were able to squeeze us in before the dinner rush even though we did not have a reservation. The menu at Nuba is very vegan-friendly, and since we wanted to find a way to try as many dishes as possible, we ordered a vegan version of "la feast," which really was the most amazing feast I could have ever wished for.
