Fairy Cakes: 3586 Fraser Street, Vancouver B.C.

Note: This review is from 10/27/2013 I  know I have said it before, but we Bhamsters are really lucky to be so close to Vancouver. Vancouver offers us so many amazing vegan-friendly places to eat. And lucky me, I finally had a chance to check out Fairy Cakes yesterday! If you are ever in Vancouver and looking for some sweet vegan goodness, you must stop by Fairy Cakes. You won't be disappointed. They are also located super-close to Nice Shoes , which is a wonderful vegan shoe and accessory store-- (they also have some really cute purses and vegan bags, and yes, I did buy a new purse while I was there. We had a really great chat with her, and she also told me which of her baked goods included corn starch, and which ones did not, since I can no longer eat corn. Inspired by Tal Ronnen: Beet, Apple, and Arugula Salad

The last page of the most recent issue of Vegetarian Times features Tal Ronnen , and the question of what fruits and veggies make good pairings. In his answer he mentions that his restaurant makes a beet and granny smith apple salad, and rather than sharing an actual recipe, he provides an overview of how you can boil the beets, dice them along with the apples, and mix everything together with a lemon and olive oil dressing. After I read this, I couldn't stop thinking about it, and I knew right away it was something I wanted to try to make this weekend. So what follows is my recipe, based on Tal Ronnen's concept. Ingredients: 2 bunches of beets (about 6 to 8 beets in various sizes, plus greens) 2 granny smith apples 2-3 cups arugula juice of 2 small lemons  1 1/2 to 2 tablespoons of olive oil 1/2 tablespoon sweetener (I will admit I used some local honey, which most vegans do not consider to be vegan--I go back and forth between avoiding and using honey, and I to...

Leaf and Ladle: 1113 North State Street

The menu at Leaf and Ladle varies, but they always have something vegan, be it soup, salad, wrap or sandwich. On their Facebook page they explain: "With an ever-changing menu, whether you're a meat-eater, vegan, gluten-free, or just plain hungry, we want to feed you!" They sort of won me over in advance with that all-inclusive welcoming statement, and I am happy there is another local place that caters to everyone, including vegans. Their food never disappoints, and the people who work here are as nice as can be. This is one of my absolute favorite lunch spots in Bellingham!
