Ciao Thyme: 207 Unity Street

Ciao Thyme is one of those local restaurants that have been around for awhile now and yet they still consistently generate a positive buzz. It seems like just lately, I can't go anywhere without hearing someone talk about how wonderful they are. Despite all of this it wasn't until just last week that I was finally able to see for myself just how amazing they are. One reason it took me so long is that the cafe is only open Tuesday through Friday between 11am and 3pm. And another reason is (I am ashamed to admit) I think I assumed they wouldn't have anything vegan... And oh how wrong I was in this assumption! (You would think after all these years of writing this blog I would stop assuming such things!)

At any rate, at the most recent vegan potluck, I learned that Ciao Thyme is indeed vegan-friendly, and then a friend of mine offered to treat me to lunch there just last Thursday and I jumped at the chance to go. And I truly I cannot tell you how impressed I was. Not only is the cafe at Ciao Thyme vegan-friendly; they are everyone-friendly, be you omnivorous, vegetarian, gluten-free, vegan, or what-have-you! I have often said the most talented chefs and sincere restaurant owners are those who want to share the gift of food with everyone, no matter who you are or what your dietary needs may be. And Ciao Thyme fits that description perfectly.

If you are interested in checking out their menu, you may notice a number of vegetarian items that can be made vegan. In fact, it even says in several places on the menu to ask about vegan options. After a bit of deliberation, I selected the vegan version of the eggplant caprese and I cannot adequately convey with words how amazingly delicious this dish was. The tomatoes had that garden-fresh flavor you can't get from grocery-store tomatoes, and the eggplant was cooked PERFECTLY. Everything was so fresh and so tasty, and the balsamic vinaigrette inspired so many complementary flavors.

Beautifully presented, the food was as delicious to eat as it was gorgeous to look at. It was the kind of meal that left me almost speechless with every bite; the experience of every taste was so satisfying and easy to savor.  I also shared the grilled stone fruit salad for dessert, and while technically not completely vegan because it did have drizzled honey, I am still including it in this post because I bet you could request it without the honey and it would still be sweet, juicy, and amazing.

I am now a HUGE fan of Ciao Thyme, as are so many here in Bellingham. I finally see what all the buzz is about and I am so glad to add another unique, fantastic, and vegan-friendly restaurant to my ever-evolving list of local restaurants. Thank you, Ciao Thyme for having such delectable vegan options! And a special thank you to Ali and others who recommended this place, and to my friend who treated me to such a memorable and wonderful meal.

Thanks for this review! I will be checking out Ciao Thyme soon for vegan yumminess. On a side note, I'm surprised you included/ate a dessert with honey in it. I definitely appreciate the heads up about requesting it without honey, and am in no way shape or form trying to shame you for consuming honey (to each their own!) but it makes me a little nervous that your reviews of other vegan eats in Bellingham (and beyond) might actually contain non-vegan ingredients that you include in your diet but other vegans may not. I suppose the best rule of thumb is to always check the ingredients with the waitstaff (which I always do) to ensure it is truly vegan.
I'm a big fan of your blog and appreciate the vegan awareness you are bringing to our amazing community.
Hi Ali! I am so glad you enjoyed Temple Bar! I agree, it was great running into you and I hope it happens again! :)

Hi Anonymous,
Sorry my review of a dish that had honey in it made you nervous--I thought fully disclosing that I was including a dish that had honey and stating that I knew it wasn't technically vegan would mean that people would know I was being up front? I was trying to present people with another vegan option by sharing information about that dish and how it could be vegan. But I am sorry that made you nervous...

Ambo Ethiopian: 902 N State Street #104

The moment I have been dreaming of for over a year now has finally happened--Mulunesh Belay has opened Ambo Ethiopian again, now in it's new location!  As soon as I heard the news, I knew I would be there for the very first moment that she opened. I did not want to miss a moment and I could barely stand the waiting. Yesterday, November 16, 2019, was the grand opening in the new restaurant on N. State Street, and my husband and I went with some friends to celebrate and once again enjoy Mulu's amazingly delicious cuisine. (And yes, we were the very first ones there). I ordered the kale and yellow split peas and everything was just as good as I had remembered. I am already planning when I can eat there again (which will be tomorrow evening, in case you are wondering, followed most likely by multiple evenings this week!!). Over this past year, I have missed the delicious vegan food from Ambo Ethiopian, and Mulu's beautiful bright smile, more than I can say, and I am...

Bayou on Bay: 1300 Bay Street

Not only does Bayou have several vegan options on their menu, they also have weekend vegan brunch options! If you have not yet tried the vegan hash, I recommend it.  This mouth-watering dish takes potatoes, avocado, onions, other veggies--cooked just right and combined with the perfect amount of seasoning--to create a fantastic dish you will want to eat again and again. Weekends are just that much better when you can incorporate brunch at Bayou into them!

Pigs Peace Sanctuary: 27631 56th Ave NW, Stanwood, WA

I can't believe I have wanted to visit the Pigs Peace Sanctuary for nearly 20 years, and then finally, yesterday, my wish came true. And the experience was truly amazing. If you are not yet familiar with the Pigs Peace Sanctuary, I encourage you to learn more about it. We are so lucky to have such a valuable place so nearby Bellingham. Not only does it provide a safe place for rescued animals to recover from trauma and live out their lives in peace and happiness, it also offers humans a place to connect with and learn more about these beautiful, often misunderstood creatures.  Judy Woods and  the volunteers that help her are doing really incredible work and you cannot help but be moved by the stories of bravery, survival, recovery, and connection that Judy shares with you when you visit the sanctuary. Tour appointments have to be scheduled and approved with Judy in advance, and people are eligible to sign up as volunteers with the sanctuary after attending a tour. My...
