NextLevel Burger's "All American Burger" It's no secret that for the most part, Americans LOVE their fast food. And also for the most part, the nature of what constitutes "fast food" means that vegans generally don't have much to do with it. I do understand some of the appeal when it comes to convenience and accessibility--sometimes you want to just be able to grab something and go, especially after a long day of work, or when you are in a hurry, or if you are on the road and don't have much time to stop and eat. Wasabee Sushi: 105 E. Chestnut St.

I first wrote about Wasabee Sushi back in 2008 , but since that post I have been back more times than I can count. Over the past eight years this place has really grown on me now my favorite sushi restaurant in Bellingham. They have several vegan rolls to choose from, and the prices are very fair. At my most recent dinner there I had three different rolls, the oshinko (pickled daikon radish and cucumber), the yamagobo (pickled burdock and cucumber), and an avocado and cucumber roll. All three  rolls were delicious, although I always love anything with avocado most, especially when the avocado is just right in terms of buttery flavor and texture. Wasabee has a great atmosphere and is a place where I really enjoy dining, whether my husband and I are dining alone or if we are meeting friends. It's comfortable yet also feels a little special. Vegans in (and around!) Bellingham: Kymi Aeschliman

I am kicking off this new series about local vegans by shining a spotlight on someone whom I have grown quite fond of over these past months. Her name is Kymi and rarely ( if ever) have I met anyone who possesses such a phenomenal sense of humor combined with a such a beautifully compassionate nature. She is truly one-of-a kind and the world is a better place because she is in it. It is my great pleasure to introduce her to you now. Kymi Aeschliman is a hair stylist at The Grotto Hair Studio and has been happily doing hair there for over 5 years. She has her hands full with her 3 dogs: Olive, Kingsly, and Caper, and two sugar gliders: Opal and Pearl. She enjoys vintage fashion and very large tiaras. She is very passionate about the vegan lifestyle and has been vegan about a year and a half. How wonderful we can help animals, ourselves and the environment simply by changing our routine a bit?
